A chance encounter involving Diane Keaton, Katie Holmes, and a fateful bakery visit, the Doan’s Bakery white chocolate coconut Bundt cake finds its way into the homes of a select few on Cruise’s list. In a talk show episode, Superman actor Henry Cavill was heard raving about the delicious cake that has become a holiday staple.

Ingredients:
For the Cake:
Flour: 2 ½ cups (all-purpose)
Baking Powder: 2 teaspoons
Salt: ½ teaspoon
Butter: 1 cup (unsalted, at room temperature)
Sugar: 2 cups (granulated)
Eggs: 4 large (at room temperature)
Vanilla Extract: 2 teaspoons
Milk: 1 cup (whole or buttermilk, at room temperature)
Optional Additions:
Lemon zest or orange zest (for citrus flavor)
1 cup chocolate chips, nuts, or berries
For the Glaze:
Powdered Sugar: 1 cup
Milk or Lemon Juice: 2–3 tablespoons
Vanilla Extract: ½ teaspoon (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease the Bundt pan thoroughly and dust with flour, tapping out the excess.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, use a mixer to beat the butter and sugar until light and fluffy (about 3–5 minutes).
- Beat in the eggs one at a time, ensuring each is fully incorporated. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined—do not overmix.
- Pour the batter evenly into the prepared Bundt pan and smooth the top with a spatula.
- Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10–15 minutes before inverting it onto a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar and milk or lemon juice until smooth. Drizzle over the cooled cake.
And for vegetarians, Head Chef Prem of Cafe Eleved shared an eggless version:
Ingredients:
Butter soft: 500gm
Raw cane sugar: 500gm
Flax seed powder: 35 gm
Water: 200ml
Vanilla essence: 15ml
Soft flour: 550gm
Baking powder:10 gm
Method:
* Set the oven temperature -170⁰c
. Take a bowl and add water into the bowl then Soak flaxseed powder.
* Mix butter and raw cane sugar together in bowl for 3 to4 minutes
* Add flaxseed mixture to butter mixture and soft flour, then again mix until sugar is completely dissolve, then add vanilla essence.
* Now slowly fold flour mix (3) and don’t over mix.
* Now pour in bundt mould which is greased with butter and dust with flour.
* Now bake in set oven for 35 to 40 minutes or until it’s comes golden brown in colour .
